Freeze the butter, then grate it.
For pie crust, run frozen butter over a box grater like cheese. The frozen shreds stay whole in the dough, and every shred turns into a flaky layer in the oven. Warm butter blends in and disappears.
Warm your eggs before you bake.
Cold eggs make a lumpy, heavy batter. Set them in a bowl of warm tap water for ten minutes. Room temperature eggs whip up light, and the cake rises level instead of humping in the middle.
Once the sugar boils, put the spoon down.
Stirring boiling sugar teaches it to grain. Fudge and pralines come out smooth as glass when you stir before the boil and leave it be after. The book gives you the exact cues to watch for instead.
Take the cookies out too soon.
Pull them when the middle still looks a touch underdone. The hot pan finishes the job while they cool, and that is the whole trick to a chewy middle with crisp edges.
